Development process

  • Harvest: manual boxes of 20kg
  • Selection: in the vineyard
  • Age of vines: plus 80 years
  • Maceration: 48 hours in cold 8º C
  • Alcoholic fermentation: 6 to 10 days at 28 degrees C maximum
  • Malolactic: 5 to 9 days 19º C
  • Aged in stainless steel tanks: with lees 2 months
  • Barrel aging: 4 months in French oak foudre (medium roast)
  • Clarification: yes
  • Cold stabilization: -5 degrees C (for 7 to 10 days)
  • Amicrobially filtration: filtering plates 4 microns
  • Rest in the bottle: 2 months before going to market
