Sapphire black color for its intensity and depth, with a fine edging beet. Complex and full of typical of the area and variety. Powerful mineralization, smoke, and peat, although paradoxically fresh and full of black fruit, with a remarkable floral background. Powerful, “chewy”, and full of records in the mouth.

Development process

  • Harvest: manual, boxes of 20 kg

  • Maceration: cold 48 hours at 8º C
  • Alcoholic fermentation: 6 to 10 days at 28º C maximum
  • Malolactic: 5 to 9 days at 19º C
  • Aged in stainless steel tank: with lees 2 months

  • Cold stabilization: -5º C (for 7 to 10 days)
  • Filtration amicrobially: plates of 4 microns
  • Resting in the bottle: 1 months before going to market
